South Beach Salad Dressings (all phases)

Here are couple of the salad dressings from the South Beach book that I've slightly adapted for myself.


And onto the dressings.....

Caesar Dressing

 Ingredients:
  • 2 Tbsp Fresh Lemon Juice (1/2 of a good sized lemon will usually do)
  • 3 Anchovy Fillets (I prefer anchovies in Olive Oil)
  • 2 garlic cloves (you could probably get away with 1 but I love garlic so I may increase to 3 in the future)
  • 1 tsp Dijon Mustard
  • 1/2 cup extra virgin olive oil (may substitute partially with oil from anchovies for stronger flavor)
  • 2 Tbsp. freshly grated Parmesan (I used Romano which worked just as well)
  • Salt and pepper to taste

Directions:
Mince garlic and anchovies then combine with lemon juice and mustard.  Slowly whisk in olive oil.  Once oil is incorporated add cheese and seasonings to taste.

**Or if you have a mini food chopper like I do, place the first 4 ingredients (lemon juice, anchovies, garlic & mustard) in the food chopper and pulse a few times until fish and garlic are roughly chopped. Slowly incorporate the olive oil into dressing while chopper is running.  Once ingredients are fully incorporated, add grated cheese and salt and pepper to taste.



Soy Ginger Dressing

Ingredients:
  • 2 Tbsp Reduced Sodium Soy Sauce
  • 2 Tbsp Rice Wine Vinegar (most commonly found is Mirin)
  • Fresh Ginger, peeled and grated
    (you'll need about 1 1/2 tsp. grated ginger... if possible DO NOT use powdered)
  • 2 Garlic Cloves, minced
  • 1/4 cup canola oil (you may sub with olive oil but canola oil is pretty flavorless and will help your Asian flavors shine)
  • OPTIONAL: 1 tsp or to taste Sriracha or other chili pepper mix, paste, or oil for extra spice

Directions:

Combine 1 1/2 tsp. grated ginger with garlic, soy sauce, and rice wine vinegar (and chili paste/oil/sauce if using) in a bowl. SLOWLY add canola oil while whisking vigorously.  Continue to whisk until oil is fully incorporated.  Use on salads or as a marinade (I find it's GREAT for Ahi)

**If you've got a mini food chopper: Place a small, peeled (whole or grated) piece of ginger in food chopper with whole garlic cloves, soy sauce, Mirin, and chili stuffs.  Pulse until ginger and garlic are roughly chopped.  Turn on chopper and slowly incorporate 1/4 cup of oil. Continue mixing until all oil is incorporated.
